Halloween Sheet Pan Cupcakes

A childhood treat, Halloween-ified.

Growing up my mom would make us Texas Sheet Cake for birthdays year after year and it was easily the best dessert to grace our kitchen. When thinking about the ultimate decadent treat for Halloween, it made perfect sense to turn adapt the baked chocolate dessert into a seasonally appropriate treat, topped with Candy Corn M&M’s—or your favorite, bite-sized candy! Halloween Sheet Pan Cupcakes

Step 1


For the cupcakes:
1/2 cup butter
4 tablespoons cocoa powder
1 cup water
2 cups sugar
2 cups flour                                                                                   
2 eggs
1 teaspoon baking soda
1/2 cup buttermilk (or 1 cup milk with 1 tablespoon of lemon juice)
1 teaspoon vanilla

For the glaze:
1/2 cup butter
4 tablespoons cocoa powder
4 tablespoons milk (or almond milk)
2 cups powdered sugar
1 teaspoon vanilla

For the topping:
Assorted Halloween candy (your choice!)

How to make it:

Combine the butter, cocoa powder and water in a small saucepan over medium-high heat and bring to a rolling boil. Stir to combine.

Remove from the heat.

In a large bowl, combine the sugar, flour and baking soda. Add the melted butter mixture and whisk to combine. Once combined the mixture should be quite thick. Add the buttermilk, eggs and vanilla and stir to combine. (try your very best not to eat all the batter - it’s nearly impossible)

Line 2 cupcake tins with cupcake liners and preheat the oven to 400 degrees F. Fill each cupcake liner with 1/3 cup of the batter and transfer to the oven to bake. (20-22 minutes until a knife can be inserted in the center of a cupcake and comes out clean. )

Remove the cupcakes from the oven and let cool.

While cooling, make the glaze. In a small saucepan, melt the butter, cocoa powder and milk until smooth. Remove from the heat and add the powdered sugar and vanilla. Stir to combine.

Using a spoon, spoon a bit of glaze over each cupcake and let it mostly firm up. Top with any candy desired and serve as needed.
