Admittedly, I don't have the most adventurous tastes when it comes to salads. I love a good old-fashioned wedge of iceberg, slathered in bleu cheese with some real (or even fake) bacon bits. However, I'm constantly trying to up-my-game and this simple watermelon and feta salad is a great dish. I love how the saltiness of the cheese enhances the sweetness of the melon and rather than adding a dressing, I simply drizzled good olive oil on top, a sprinkle of mint and finished with shaved lime zest. The recipe is really customizable and it's a great way to enjoy some late summer fruit.
