I was never a Girl Scout, but what I lacked in uniforms and badges, I made up for with my love of their namesake cookies. Over the years I've experimented with all the different varieties, but always come back to my favorite: Thin Mints. They're the perfect balance between aromatic mint and dark chocolate and somehow even more incredible when kept in the freezer. I treated myself to a homemade cookie last week at a fancy bakery in Brentwood, and was disappointed by the overwhelming spearmint flavor that I decided to make my own. I followed this recipe and am so relieved that I can now make (and freeze) them whenever I want.
