I don't need an excuse to enjoy a batch of cookies, but since it's St. Patrick's day tomorrow, and I love celebrating the holiday with thematic desserts (here, here and here), I whipped up some homemade mint "milanos", to pair with pints of Guinness. I used a slightly edited version of this recipe (I cut the piping bag to 1 inch instead of 1/2 inch and added 2 tablespoons of mint extract to the chocolate), which produced a slightly crispier cookie than the store bought version.
