I don't remember my grandma cooking much when I was young (my mom claims that she used to substitute ketchup for spaghetti sauce), but her potato latkes made up for any other shortcomings in the kitchen. I requested them nearly every time I saw her and until I made them by myself yesterday, I had no idea how much work was required. I followed this recipe, and got the best results when I squeezed out all of the excess water and made them really thin. I topped them off with sour cream, some chopped chives and apple sauce and can't wait to make them for my grandma next time I see her.
