Waffles (with not-so-healthy toppings) used to be my go-to meal every time I went out for breakfast. There's nothing wrong with whipped cream and strawberries, but it pretty much guarantees that the rest of the afternoon will be spent in a food coma. This past weekend my fiancé and I combined some of our favorite flavors to create the ultimate waffle - one that mixes sweet, savory, and salty all in one, perfectly comprised plate. We followed this recipe for seriously light waffles (thanks, in part, to the whipped egg whites) and added some diced cooked pancetta into the batter. We topped it with peaches, drizzled on syrup, and have since deemed it our new recipe for lazy Saturday mornings.
