Don't get me wrong - 2010 hasn't exactly been filled with raw veggies and fruit. Conversely, I've already had fish and chips (paired with a few Guinness), a trip to a bin candy store, several cheese platters and what seems like endless bowls of ice cream. Since there always has to be a balance, I was in search of a hearty, winter salad and this one, with orange, fennel and arugula, fit the bill. All the flavors complement each other so perfectly and while it looks fancy and indulgent, really only takes minutes to make.
