Sometimes there's nothing better than a sweet, simple cookie. I had an extra bag of almonds from when I made these, so I decided to put them to good use. For those who have never had a Linzer Cookie (recipe here), they're typically reserved for the holidays, but I think they're acceptable any time of the year. They're light and and flaky and I always make a note to invite at least one girlfriend over for afternoon tea when I have a few of these lying around since they make an impact in the prettiest way.
