Layered Caramel Crunch Pops
I have a weakness for frozen desserts, namely Drumsticks (these homemade ones I made a while back are unreal) and anything involving vanilla, chocolate and caramel. For a fun twist on a Snickers bar, I came up with these layered caramel crunch pops that require no work besides pouring melted ice cream into Dixie cups. The added crunch from the caramel-meets-salted-peanut top is a nice touch and striped popsicle sticks made them cute enough to serve at last week's dinner party.
For those who asked, here's the basic recipe:
1. Pour a small amount of caramel into the bottom of a Dixie cup ( I used a 3 oz. cup).
2. Pour in 1 to 1.5 oz of melted ice cream (either chocolate or vanilla), place in freezer to set.
3. Repeat step #2 with the other ice cream flavor and place in the freezer for a few minutes until it's slightly firm, then insert sticks and return to freezer until fully set.
4. Remove from cups and dip the top in chopped peanuts.
