I have an unhealthy obsession with bread, but never have the patience to make it myself. All of the kneading, waiting and rising frustrates me, which is why this Irish Soda Bread recipe is perfect on so many levels (it was simple to make and was out of the oven in less than an hour). The hint of orange with the dried currants was refreshing and I was pleasantly surprised by the moist texture and hearty crust. I've already added this to my must-make list for when we host brunch and can't wait to experiment with different flavor combinations.
