It’s bridal shower / baby shower / birthday season in my world and I’ve decided I want to be known as the girl who brings cookies to everything. Like really really good cookies. The kinds of cookies that are just barely crispy on the edges, still a bit soft in the middle, and perfectly salted so the flavors really shine. I’m all about a chocolate chip cookie, a double chocolate cookie, white chocolate cranberry cookies, peanut butter cookies - the list goes ON - but today I’m really feeling these Funfetti Sugar Cookies. Do you remember those sugar cookies we used to get at the malls as kids? (please say it wasn’t just me!) well, I’ve cracked the code on the recipe and added in some sprinkles to be festive. Promise me you’ll make them and report back - I think you’ll be obsessed!

Funfetti Sugar Cookies 


1 cup unsalted butter, at room temp 
2 cups white sugar
2 eggs
2 1/2 teaspoons pure vanilla extract
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
½ -¾ cup non pareils rainbow sprinkles
Preheat your oven to 350 degrees

Cream together the butter and sugars in a mixer. Add the eggs and vanilla, making sure to scrape down the sides of the mixing bowl. Add the flour, salt, baking soda and baking powder and mix on low until everything is incorporated. Add the sprinkles and mix.

Chill the dough in the refrigerate for at least 2 hours. Scoop out about 2 tablespoons of dough, and roll it into a ball. Chill the balls of dough for 15 minutes (chilling the dough prevents the cookies from spreading too much while baking)

Place 12 cookies on a sil-pat or parchment lined baking sheet.

Bake for 9-11 minutes until just slightly golden around the edges. Remove from oven and let rest on the baking sheet until mostly cool. Transfer to a cooling rack and let cool completely. Or don’t, and eat them while they are still warm :)
