I have a rather interesting relationship with coconut. I've never actually liked the fruit itself, despite how wildly appealing it is when you're sitting on some tropical beach. It's just one of those things that looks better than it tastes. When it comes to desserts though, you won't find a bigger fan. Yesterday I made coconut macaroons (I used this recipe) for a dinner party and I still can't believe how easy they were to whip up. They were perfect on their own, but the addition of semi-sweet chocolate brought them to a whole other level.
