Watermelon-Lime Popsicles

Last night I hosted a little Glee-watching party at my place and decided that some icy treats would make for a fun dessert.  My friend Brooke gave me an amazing popsicle mold for my birthday (she knows me well) that I couldn’t wait to try.   I bought a fresh watermelon at the farmers’ market last weekend and blended it with a few teaspoons of superfine sugar and lime juice and then pureed the light part of the rind for the base of the popsicle.  It took hardly any time at all (aside from the freezing process), and they were a refreshing departure from the ridiculously fattening desserts I typically make.
