Very Berry Pie

After I came home from the Farmers’ Market with what must have been five pounds of berries, I knew I’d have to set some aside to bake a pie. I used a simple recipe from “Joy of Cooking” (there’s a similar one online here) since I find the less you tamper with fruit, the better. The result was exactly what you’d hope for in a summer pie. The oozing berries had just enough tartness and the crust was flaky, crisp and buttery. I’ve already planned on having it for breakfast for the rest of the week (sans the vanilla ice cream, of course).

summer berries are sublime (i also used a little berry compote for my favorite brioche french toast) and your pie a la mode is one of my most wished for treats since i was a little girl.

Ahh this looks amazing! Fresh berries are so crazy expensive in Perth (Australia) that I could only ever dream of a pie like this. Frozen berries just don’t cut it!

This is a classic delicious desert. I love eating desert for breakfast. I remember when my grandma used to do it when I was little. I thought she was such a rebel breaking the rules. Now I do it, and I must say breaking that rules are the best way to start a day!

No way! This is my favorite pie, literally. Joy of Cooking is the best. I just got back from a trip to the states where my mother-in-law surprised me with it and I ate the whole thing morning, noon, and night!

What a delish looking pie! Yum…Here’s a tip: to get more of a golden brown color on the crust, use a pastry brush to dab on egg wash (just crack and beat an egg). Makes it super golden and brown just like on a Pillsbury commercial. Double yum.
