Thin Mints

I was never a Girl Scout, but what I lacked in uniforms and badges, I made up for with my love of their namesake cookies. Over the years I’ve experimented with all the different varieties, but always come back to my favorite: Thin Mints. They’re the perfect balance between aromatic mint and dark chocolate and somehow even more incredible when kept in the freezer. I treated myself to a homemade cookie last week at a fancy bakery in Brentwood, and was disappointed by the overwhelming spearmint flavor that I decided to make my own. I followed this recipe and am so relieved that I can now make (and freeze) them whenever I want.

    Thin Mints are by far my favorite! I have tried to venture out to the other GS cookies but am never as satisfied as I am with Thin Mints. My family also freezes ours :) They are so addicting and sadly I have no way to order any. Now I can make my own! Thanks, Em!

    I have something very stupid to say but I will say it anyway… I never thought you can make Thin Mints at home!!!
    Here, I’ve said it.
    Now, I will shamefully go to the supermarket to buy the ingredients and try it myself. Too good to be true!!

    I will definitely have to try these. I love thin mints. Though I usually don’t buy them from girl scouts. I get the Keebler elf version called “grasshopper” cookies. I love them!!!
