{Coconut cupcakes with coconut cream cheese frosting}

It’s funny how birthdays evolve as you get older.  When you’re a kid, you’re mainly concerned with who’s coming to your party, what dress you’re going to wear (or baseball cap in my case) and which flavor of ice cream cake to serve.  With each passing year, things seem to get more complicated and there’s a new sort of pressure associated with your “special day.”  I like to keep things simple to avoid any drama or disappointment and had an intimate brunch with several girlfriends on Sunday.  Plus, anytime you can start off a day with a cupcake and a glass of champagne is a winner in my book.

I have to agree with you, if you put too much pressure on that special day, invite tons of people, get caught up in insane preperations, … it usually just turns out to dissapoint! I am thinking simple red-velvet cupcakes and cosmos for my next birthday! :)

Coconut frosting is gorgeous, I also sometimes add lemon or lime juice and zest. Gives it a little extra taste.

Yes, there’s so much pressure associated with birthdays these days. I always try to take off the pressure and just do something with a few girlfriends too. Brunch with your girlfriends sounds like the perfect way to spend your birthday. And I completely agree, there’s nothing better than a cupcake and a glass of champagne to celebrate any special occasion. Happy Birthday!

happy birthday and you certainly have the right attitude. as we get older it seems more and more difficult to figure out what’s an appropriate expectation of the people in our lives. as our worlds get busier, it’s less and less easy to pay attention to other peoples’ special moments. by arranging an event yourself to hit your expectations and inviting your people, you’re showing such maturity and getting the special time you wanted at the same time!

I so understand this. Last year I was pregnant on my bday and barely even acknowledged the day (though my family did!) Nowadays, it’s nice to just have an excuse to get together with your favorite people, though when I was younger it was such a huge deal!

This is quite literally the best birthday brunch I’ve ever seen. The cupcakes! The little mermaids (where did you get those!!) bagels, and fruit salad. That is definitely simple without being overdone :)

I made the cupcakes yesterday and they were fab. I had to make my own buttermilk – but it is super easy. I also just halved the quantity and it still made 12. Yum!
