Summer Risotto
We all have dishes that intimidate us in the kitchen. For many years, mine was risotto. Despite the fact that I ordered it nearly every time we went out for Italian, I was overwhelmed by the prospect of recreating it at home. It does require a lot of hands-on time, but when the finished product involves spoonfuls of velvety rice in a decadent sauce, it’s worth the effort. I used this recipe, since it was incredible in the fall, and to make it more summer appropriate, I substituted asparagus, green peas and prosciutto for the butternut squash, saffron and pancetta.

Mmm, I love risotto. Nigella has a lovely cheddar cheese recipe which I love but you’re right, it is quite labour intensive!

risotto is one of my favorite dishes and I often do it at home. I like the asparagus one or just with some herbals and celery and I enjoy shrimp-tomate risotto as well. mmhm. I’m getting hungry here in the office!

Risotto is such a great, quick, one pot meal. Love pea and shrimp, in fact, I blogged about it 6/15/10.
Ahhh, risotto is the only recipe I have ever attempted that has totally FAILED! It may have been due to the fact that I decided I could substitute brown rice for white, but mine turned into a gross, slightly burnt but still crunchy mess!

That looks delicious and I love the shot of the peas and asparagus! And I’m not even a fan of prosciutto or asparagus. When you come back to NY, we have to go to this favorite place of mine that has amazing lobster and risotto dishes.
looks delicious! risotto is one of those things that you can easily switch to brown rice and make it super healthy. sans prosciutto i can easily make this vegan. the peas and asparagus look super yummy. at my local farmer’s stand, one of the farms offers shelled peas that are amazing! i’m totally going to try this. thanks for the inspiration:)

That is a tough dish to master! My friends and I tried to make a large batch for a dinner party once. It was edible but not fantastic. Practice makes perfect though! And I will say that having more than one person to help take turns to stir the pot is helpful!

Ooo Emily – looks fantastic! Risotto always reminds me of the “Dawson’s Creek” episode, where Pacey tries to cook for everyone and the Risotto turns out gummy. Such a tricky dish, I’ve found. Do you have any tips to take into account while cooking the rice?

you are so right about risotto being a bit intimidating. For the longest time I wouldn’t make them. Then I made this 5 mushroom risotto and have been making them since. But, it was hard to find all those types of mushrooms and then making the risotto was a challenge. In any case, your pictures are gorgeous and I bet it tasted delicious!

It’s like you read my mind! We had scallop and spinach parmesan risotto (tasting risotto for the very first time!) just the other night at one of our fave go-to spots in NYC, Barbounia. Barbounia was reviewed (with pictures) at http://www.harrietmagpie.com – the restaurant is delicious and the risotto was out of this world – we never knew what we had been missing! This dish looks beautiful here. I’m so impressed, considering I know how difficult it is to cook risotto well, with getting the timing between way too soft and way too tough…so, job well done! i made my bf a mean courgette risotto the other day it was lovely if i do say so myself…but he complained that he had never seen ‘wet’ rice before and didnt like the look of it…

I’m going to have to try this! I love risotto and made a butternut squash version for Thanksgiving last year and while you’re right, it does take a lot of constant attention, it’s actually fairly simple and definitely delicious!

Risotto is a great stress buster for me. Open the wine when you start stirring. Fresh sweet corn cut from the cob is an excellent addition to risotto.
I’ve always been intimidated by risotto as well — people always tend to mess it up on “Top Chef,” and I’m convinced that I would as well! However, this is too pretty and delicious-looking not to try…

This looks wonderful! When I make risotto and have leftovers and usually make risotto balls. You take the cold risotto form into balls dip in a beaten egg, roll them in bread crumbs, and fry them up. Delish!

Don’t be scared by risotto. It’s my absolute favourite dish to make, and there are soo many variations. I make it at least once a week. Once you get the base recipe right, it’s incrediably easy! I recommend using Jamie Olivers base risotto recipe

I use to feel the same way – ordered it constantly but too afraid to make it. But now it’s cooked at least once a month (if not more – especially in winter), and I love that it’s actually deceptively easy and so adaptable depending on what’s fresh and seasonal. Luscious comfort food!

I’ll have to try this. Risotto and baking brioche (again) are my biggest fears. Plus, you and I seem to have the exact same Le Creuset pot! So it must work!
This looks so yummy, my favourite risotto is mushroom risotto. But I will definitely give this a try especially when asparagus is in season.
