Strawberry Shortcake

Strawberry shortcake is one of those desserts that is just as fantastic now as it was when I was a child.*  What’s even more exciting is how easy it is to whip together on a random weeknight when strawberries are finally in season (I made an exception a couple months ago here).   I used this recipe, which was exceedingly simple and took full advantage of the fresh berries and flaky biscuits.

*The same cannot be said about Pop-Tarts, Bubble Gum ice cream and Candy Buttons.

My fave strawberry “shortcake” recipe involves mascerating strawberries in sugar until they and juicy and pouring the sweet mix of juicy, sugary berries over a light sponge cake. Yum!

Those look delicious and I love that you made the whipped cream from scratch. They were still tasty buy probably not as fab as yours :)

Strawberry shortcake is one of my absolute favorite desserts! I agree, it’s just as good now as it was when I was a kid. Yours looks incredible! The biscuits look like they melt in your mouth. Beautiful pictures!

I think the bubble gun ice cream thing could be debatable. :)

Strawberry shortcake was my favorite desert in the world as a kid. My grandmother would make it every Thanksgiving just for me. Those flaky biscuits sound like a new twist on a classic recipe. Nice find! My mom changes it up a little too and makes chiffon cake from scratch for the cake park of the recipe. It’s family favorite :)

Strawberry shortcake is delightful. It’s like the American cousin to the tartes aux fraise in patisseries in France. I just had one of those on vacation earlier this month, and it was perfection wrapped up in one little tart.

Emily! this is my all time favorite dessert. I love strawberries so much. I had a friend in high school who made me a strawberry shortcake for my bday every year. For my baby shower a few weeks ago my mom and sister got me a fabulous strawberry shortcake but on top of all the usual goodies that come with the cake, the bakery added a layer of dulce de leche – one of my all-time favorites. It was BEYOND! so so so good!!! these look amazing. I have to try the recipe.

PS–I will definitely take you up on your offer to go to the blow dry salon next time I’m in LA! My cousin is a stylist and has a salon in laguna beach. I’m going to tell her about this place…she’s going to LOVE it. :)

This looks so delicious. I doubt you’ll get a chance to read this with all of these comments but my mother and I used to make biscuits, and prepare the strawberries just like you did but instead of cool whip etc we just placed the biscuit in a bowl, poured milk over it and broke up the biscuit and then topped it all with strawberries. I was more like Strawberry Cereal than shortcakes but it was SO tasty. I remember having this for dinner some nights – I always loved random not normal dinner nights. ox
