Shrimp Spring Rolls

For someone who appreciates food as much as I do, it’s unfortunate that I simply don’t have a taste for cooked vegetables. I’ll eat them raw – dipped in ranch dressing like a kindergartener, but other than that, it’s a constant struggle. One way I’ve always been able to actually enjoy them though, is wrapped up in cute little spring rolls (alongside a delicious sauce, of course). These shrimp spring rolls were surprisingly simple to make – once everything has been sliced and diced into little strips. They’re also easily customizable, based on your preferences, and I’m happy to report that I’m now getting a full serving of vegetables, at least a couple of times a week.

    I honestly didn’t know how easy these were to make. I’ve seen the wrap portion in grocery stores, I’ll have to pick some up and give a try. It’s funny about raw veggies because I have a hard time eating them raw ;)

    You should be getting a full serving of vegetables 7-8 times a day! I hope, for the sake of your health, that you eat more veggies than 1-2 servings a week :) ?! It is a natural source of beauty for your skin and hair, prevents illnesses like cancer (hello antioxidants) cleanses your organs, and elevates energy levels. Try making green juice every morning and you will never need coffee again.

    ps- those are summer rolls, not spring rolls. Spring rolls are deep fried like eggrolls. Still, they are amazing!

    I think the problem with cooked vegetables is that most people over cook them. They should be cooked just until the raw edge is taking off but they still remain some crunch. Roasted veggies seasoned with thyme and salt and pepper is my favorite! I could eat that every day for every meal. Yum. These spring rolls look awesome too!

    I would give juicing a try… you can get all sorts of micronutrients in like, 30 seconds flat. I totally depend on it to keep a balanced diet! :) Plus there are some seriously refreshing, yummy recipes out there!

    I completely understand. The only time I eat cooked veggies is when they’re covered in cheese sauce. Very childish. I like salad sometimes. Have you tried the Briannas Buttermilk Ranch Dressing? It is AMAZING.
