Shrimp Spring Rolls

For someone who appreciates food as much as I do, it’s unfortunate that I simply don’t have a taste for cooked vegetables. I’ll eat them raw – dipped in ranch dressing like a kindergartener, but other than that, it’s a constant struggle. One way I’ve always been able to actually enjoy them though, is wrapped up in cute little spring rolls (alongside a delicious sauce, of course). These shrimp spring rolls were surprisingly simple to make – once everything has been sliced and diced into little strips. They’re also easily customizable, based on your preferences, and I’m happy to report that I’m now getting a full serving of vegetables, at least a couple of times a week.

    These look delicious! But, aren’t these known as shrimp fresh rolls? Spring rolls are fried…. These are clear wraps, I believe they are fresh rolls, I mean that’s what they are called when I go to restaurants.

    I attempted making them myself, I failed epically!!! They are so hard to roll!!!

    I have always loved making spring rolls! I love the raw rice paper, and the millions of combo’s you can wrap up in them! From sweet fruits, to spicy pepers, crunchy veggies and fresh fish… sooo yum, sooo easy! Thanks for sharing!

    You should try Brodard’s spring rolls in Garden Grove! They are the best….with pork roll, crunchy eggroll wrapper in the middle, and umami dipping sauce! It’s my favorite spring roll! =)

    Saw these on your blog a minute after you posted the and knew I had to try them! Made them for dinner tonight and they tasted better than take-out! I didn’t make the sauce, just got the chili pepper stuff, but it was really quick and easy and am definitely making these again soon. Thanks for the recipe, hope to see more like it!
