I'm seriously bummed that the Olympics are over, so I decided to bring a bit of Brazil into my kitchen!

A few years ago I spent three weeks hopping around Brazil and picked up a major addiction to Acai Bowls! It’s like a smoothie bowl but better—and the base made with acai is ah-mazing (and amazing for you). The bottom layer of these bowls is made in a blender, and then you get to jazz it up based on your topping preference. I mix it up with kiwis, mangos, bananas, strawberries, blackberries, blueberries, raspberries, pineapple, cherries, peaches, nectarines, AND some granola! The possibilities are endless.

So while we all cry a little bit when we go to turn on the TV and there’s no gymnastics to watch or swimming world records being crushed, at least we know there’s a delicious Acai Bowl just minutes away from being enjoyed if you have everything in your fridge!

Acai Bowls

For the Acai Puree:
2 acai Superfruit Packs (I use the Sambazon packs found at Whole Foods)
1 banana
1/3 cup vanilla almond milk    

For the toppings:
Sliced Kiwi
Sliced Mangos
Sliced Bananas
Sliced Strawberries
Blueberries
Blackberries
Cubed pineapple
Shredded Coconut
Crumbled Granola (recipe here)     

Blend the 2 frozen acai packs in a blender with the banana and almond milk until it’s thick and smooth like a smoothie.

Top with assorted fruits crumbled granola. Enjoy immediately.
