Roasted Shrimp and Orzo

This pasta salad is a staple during warmer months at our place. It’s easy to throw together and there’s something so appealing about a dish that can be served immediately or eaten cold several hours later. All of the herbs and textures complement each other and I love a good lemon vinaigrette that ties it all together. We serve it embarrassingly often and since it’s enough for a party of six, it’s a great way to ensure you’ll have leftovers for the remainder of the week.

  3. My mom makes this exact dish! Although I find it even more appetizing when she adds chicken broth and alfredo sauce for a more creamy texture! You should try it sometime, just a little tip! :)

  14. I love my pasta salad with ranch dressing on top:) and lots of pasta and tomatoes and zuchhini and crab! But i’ve never tried it with shrimp. I certainly will have to:)

  15. Wow, this looks so incredible!! I love orzo and zucchini, and the shrimp looks like an perfect way to make it a little more substantial but still light enough for a spring dinner. Mmmm I’m wondering if there are other types of cheeses that would be fun to try with it.
