Quinoa Tabbouleh

I’ll be the first to admit that I don’t have the best eating habits. I rarely remember to eat vegetables and find most health food to be bland and boring. I used to feel the same way about quinoa, but have since changed my stance on it, when prepared properly. I made this recipe, and it’s the ideal side dish. It’s bright and full of flavor, with lemon juice, cucumbers, and tomatoes, and feels far from health food.

I’m somewhat a really healthy eater but this is the first I’ve seen of the Quinoa Tabbouleh. This is definitely a unique recipe. It would be interesting to try!

Hi, this looks delicious! As I love Tabbouleh and make it often, I’m just a little confused – in the pictures it looks like you used fresh mint, not italian parsley? In the original recipe one uses both, but the word Tabbouleh itself means “italian parsley salad”, so I just wanted to know

There’s a lovely little hole-in-the wall restaurant in Madison, WI that makes a summer quinoa and black bean salad that is to DIE for. It’s just quinoa, black beans, corn, green onion, and cilantro in a lime dressing served over romaine. israeli cous cous is actually good and fun to eat. but still i find most of these middle eastern grains to be a little bland.

I LOVE quinoa, it’s such a unique and light seed to eat. And healthy! As long as you have the right spices in the right amounts, healthy food is always good

I love quinoa so much and helped me lost all the weight after 3 babies! I like it red with chopped mangoes, almonds, pistachio, cucumber, chives, olive oil, lemon juice salt and pepper ( you can add tumeric too) so rich and wholesome! Once I tried with Carter & Cavero meyer lemon olive oil was so so good I ate the whole thing in one day!
I’ve had a hard time with quinoa too, but find recipes that are packed with lemon and herbs (like the one you noted), make all the difference. I love how roughly you chopped the herbs0 gorgeous!
I should try this since I have a Costco sized bag of quinoa I need to use! I also really like this recipe from Bon Appetit (it’s kind of my go-to)

I will definitely try this recipe! Love the vibrant pics you take – although it makes me hungry! I just made a vetegetarian chilli with a ton of indian spices. I froze the leftovers in mini pyrex containers! Healthy, yummy & convenient! Win/Win

I made this recipe when you first posted it and I loved it! Sadly, the link is no longer available, but I found this recipe instead. It’s very similar, although, the original recipe yielded a salad that was smaller by about half, and it called for a lot more parsley/mint (more than double!), proportionally. http://www.canada.com/Tasty+quinoa+adds+healthy+boost+salad/5408679/story.html
