Potato Pockets with Caviar

There are certain things about New Year’s Eve that I truly love – getting dressed up, drinking champagne, toasting to the end of a year…but there are also things I could do without –  like the hassle of picking the right event/party/restaurant (and then finding a cab home), the exorbitant prices, and the hype that goes along with it all. Instead, we like to incorporate all of our favorite aspects of the holiday without leaving home. For those of you that feel similarly, I’m making appetizers that look (they remind me of little geodes) and feel festive – perfect for a relaxed, but elevated evening at home.

    We just made these for this evening! Oh, thank you again for a fantastic idea. Super easy!!!! Delicious. I didn’t do the caviar. I love cav, but it’s pricey. Living in Dallas, Central Market always has these purple delights.
