Peppermint Marshmallows

For someone who eats marshmallows as regularly as I do, I’m not sure how I managed to go so long without making them from scratch.  It’s safe to assume that most things are improved drastically when made at home (examples 1, 2 and 3), but I didn’t realize how you could improve on something already so perfect.  Turns out, you can; especially when you add a little peppermint and some food coloring.  I used this recipe and they came out light and fluffy and are the perfect complement to my daily mug of hot chocolate.

  8. As a vegetarian I’m really irked that I had to give up marsh mellows, does such a thing as veggie marshmellows exist? sans the gelatine? I’d have a go at making those. I absolutely cant cope with gelatine.

  21. The recipe worked out quite well, until I wanted it to become solid. We used rose extract and à bit of red food colouring to give it a pink glow. It tastes really good though!!! Thanxx and we love your blog+recipes! Xoxo
