Peanut Butter Ice Cream Sandwiches

The past few days have been hot. And I don’t mean just hot by winter standards, but actual 80°+ days. In order to properly celebrate, I made my first frozen dessert of the year – peanut butter ice cream. It was good on its own, but the flavor was so intense (I went with 1 cup of peanut butter vs. the recommended 1/2 cup), that it needed something to balance it out. Enter: sugar cookies. They added a nice complementary crunch and when coated with a layer of chocolate sprinkles (or jimmies if you’re on the east coast), it became pretty much the ideal combination ever.
