Pancetta Waffles with Peaches

Waffles (with not-so-healthy toppings) used to be my go-to meal every time I went out for breakfast. There’s nothing wrong with whipped cream and strawberries, but it pretty much guarantees that the rest of the afternoon will be spent in a food coma. This past weekend my fiancé and I combined some of our favorite flavors to create the ultimate waffle – one that mixes sweet, savory, and salty all in one, perfectly comprised plate. We followed this recipe for seriously light waffles (thanks, in part, to the whipped egg whites) and added some diced cooked pancetta into the batter. We topped it with peaches, drizzled on syrup, and have since deemed it our new recipe for lazy Saturday mornings.

  1. Im a vegetarian and this is still making me hungry! waffles are my absolute favorite breakfast ever and the salty/sweet combination sounds delicious. i might have to find a way to transform these so i can make them.

  25. These look even better than waffles loaded with the whip and strawberries. Peaches are in season right now so they definitely taste sweet. I love adding whipped egg whites into food because they taste light and fluffy. Perfection.

  28. Pancetta can be used as a base to any dinner if you don’t make them sweet. You could use pancetta instead of puff pastry for a different type of chicken a-la-king.

  30. Gotta love those sweet and savory dishes! Emily… make sure to give this one a try. Whip some freshly grated parmesan cheese into the waffle mix and then top the waffle with bacon, brie, several basil leaves and a dollop of apricot jam. Great for brunch, but that much better as a late night snack paired w/ a dry CA Blanc de Blanc. Romantically indulgent!
