Orange Fennel Salad

Don’t get me wrong – 2010 hasn’t exactly been filled with raw veggies and fruit.  Conversely, I’ve already had fish and chips (paired with a few Guinness), a trip to a bin candy store, several cheese platters and what seems like endless bowls of ice cream.  Since there always has to be a balance, I was in search of a hearty, winter salad and this one, with orange, fennel and arugula, fit the bill.  All the flavors complement each other so perfectly and while it looks fancy and indulgent, really only takes minutes to make.

2010 has been incredibly indulgent for me so far… Over the past 4 days I have had meals at Mozza Osteria, Tavern (in Brentwood), Katsuya, Street, Akasha, Newsroom, In n’ out, and Bay Cities. My stomach hurts just reading over that list!! (good thing I head back to New York tomorrow!)

I’ve reinstated my “eat healthy” mantra for 2010. It’s tough to make the transition after eating piles of Christmas cookies! But this looks phenomenal!

I love fennel…I haven’t mastered that skill of slicing the oranges in that way…so sad, my cable provider just dumped the Food Network so I am in Ina withdrawal…I really like that texture combo- the crunchiness of the fennel and the smooth orange…it must be great!

I love oranges in my salads, but fennel is often too strong of a flavor for me. But your dramatic declaration makes me want to try it!

I’ve been making a version of this that is soooo delicious and refreshing:
navel oranges
fennel
a hand full of fresh mint
chopped greek olives
a drizzle of olive oil

It’s really yummy!

I’m so glad that you mentioned you’d been eating ice-cream, or I would have felt really guilty for the chocolate that I just inhaled! Lovely looking salad, though. It’s still just too cold for that kind of thing in London – it’s vegetable soup and crusty bread all the way! Send us some of your L.A. sun….please?

Sounds delish. Another great use of fennel is pairing it with thin slices of parm, drizzel with olive oil and serve with a warm wheat pita! YUMMY.

I just made grapefruit and fennel salad two nights ago! I added some mint to the salad, and served it with seared tuna. So good! It’s such a pretty dish.
