Linzer Cookies

Sometimes there’s nothing better than a sweet, simple cookie.   I had an extra bag of almonds from when I made these, so I decided to put them to good use.   For those who have never had a Linzer Cookie (recipe here), they’re typically reserved for the holidays, but I think they’re acceptable any time of the year.  They’re light and and flaky and I always make a note to invite at least one girlfriend over for afternoon tea when I have a few of these lying around since they make an impact in the prettiest way.

  20. Here in Germany they are called “Linzer Törtchen” (ö = oe) and we have them at Christmas. Normally they are round.

    Linz of course ist not in Germany, but in Austria.
