Lemon Ricotta Pancakes

When I was little I loved the ritual of Saturday morning pancakes.  The buttery smell wafted through the entire house and was a guarantee that the rest of the morning would be spent indulgently lazy and satisfied.  I still feel the same way about pancakes and now appreciate slightly more refined recipes like these lemon ricotta pancakes with lemon curd and raspberries (recipe here).  Instead of waiting until the weekend to try them, I decided to make them for dinner and they were full of flavor and a fun change from our normal routine.

    You can also take any pancake mix and make it up then add a few dollops of sour cream! Really brings them up a notch. Also don’t forget to zest some lemon in the batter or toss in some chocolate chips and/or shredded coconut. SO easy to make!

    Hi! Your photos are amazing! Hey, I got a question, I have just tried this recipe and it is pretty good, but my lemon curd was more yellow like, not brownish orange like yours, plus they were way thicker… don’t get me wrong, it tested great but I wanted to get the same result as yours!! haha So… how did you get a lemon curd looking like that? Or is it not lemon curd? Is it maple syrup that you poured over the pancakes? But how can it be? It looks slghtly thicker then a regular maple syrup… I mean, every time I try to take pics of my pancakes with maple syrup on top I can never get it dripping, it runs all the way down to the bottom to the plate and forms up a puddle, in a matter of sec!! So please, please, please, answer this poor Brazilian treying to make and take snapshopts of pretty American pancakes!! lol Pleeeeease tell me, what is it? Maple syrup? Lemon curd? And how did you make it and make it run down the pancakes so slowly so you had a chance to take those great pics?? How? HOW? HOOOOOOW? :D Thanks! Natalia :)
