Lemon Curd Crepes

I love how certain foods can transport you to a different time and place. Gelato will always take me back to our honeymoon in Italy, the same way that plantains remind me of warm afternoons in Costa Rica. People always talk about crepes that way – the memory of finding a small café on a cobbled side street in Paris by following the scent in the air.  I’ve never been, so in the meantime, I’ve fashioned my own interpretation with lemon curd crepes at home. You don’t need any fancy equipment or even a ton of time (our filling came straight from a jar), which was a welcomed surprise. I’m sure they’re a far cry from the ones you find in France, but until I get to experience the real thing, these will have to do.

    You really should try homemade lemon curd. There’s a noticeable difference between it and pre-made from a jar. And it’s not hard to make at all.

    I just made these. They were yummy, but I was wondering how you make them so that the flour doesn’t form indestructible clumps and screw with the thinness of the crepes.

    I love crepes! They are so versatile. I have made them with different types of filling, such as Nutella, Jams, bacon and egg and then brush with maple syrup on top of the crepes. Delicious! Ok, now I’m hungry.

    I just made these last Sunday and they were amazing! I had to thin it out a bit with extra milk and water to achieve a consistency that would easily coat the pan, but perhaps you’re more deft of wrist than I. :) Thanks for sharing this!
