Lemon Bars
As a kid, bake sales were one of the greater pleasures in life. I would collect nickels and dimes weeks in advance so that I could load up on as many brownies, Rice Krispie Treats and lemon bars as my savings allowed. Lemon bars were always one of my favorites and the other day I realized that I had never made them myself. I can now say that I’ve made them twice in the last day. Not exactly by choice. See, when the recipe said to let the crust cool completely before pouring on the cold lemon filling, that wasn’t open to interpretation. Fast forward 12 hours later, and out came the most wonderfully tart lemon bars (recipe here), with just enough zing to warrant spending your entire savings in coins.

I’m a fan of anything that features lemon as a main ingredient, and I love to bake. But for some reason, I’ve never taken it upon myself to make lemon bars. We’ve got a three day weekend over here this week, so I think I might try this!

I’ve had a past traumatic experience making a batch of these bars! Usually one to follow a recipe to a tee, I think I must have gone AWOL on an egg or been a little generous with the flour or something! Whatever happened along the way, it resulted is a slightly bizarre scrambley mess, which in essence looked as though it had previously been digested! Yours look divine, and have given me the confidence to give it another try! PS – although thrilled you have a recipe section now, so I’m going to investigate your archive for some more inspiration!

Lemon Bars used to be my absolute favorite dessert growing up. After school I would go to a bakery on the corner of Divisadero and California St and get one lemon bar and a hot chocolate.

I love lemon bars and I LOVED bake sales and concession stands at my siblings’ baseball games. I would go around hoarding nickles and dimes just so I could get some baked goods and candy (like Fun Dip and Ring Pops).
