Lemon Bars

As a kid, bake sales were one of the greater pleasures in life.  I would collect nickels and dimes weeks in advance so that I could load up on as many brownies, Rice Krispie Treats and lemon bars as my savings allowed.   Lemon bars were always one of my favorites and the other day I realized that I had never made them myself.  I can now say that I’ve made them twice in the last day.  Not exactly by choice.  See, when the recipe said to let the crust cool completely before pouring on the cold lemon filling, that wasn’t open to interpretation.  Fast forward 12 hours later, and out came the most wonderfully tart lemon bars (recipe here), with just enough zing to warrant spending your entire savings in coins.

  10. Did you use the Full-size lemon layer or Thinner lemon layer? I’m thinking about trying these out this weekend, but I’m not sure which one I want to use..hmm decisions decisions. :)
