Homemade Strawberry Jam

June 14th, 2011

This past week my friend and I went to the farmers’ market in search of Seascape strawberries. They’re my favorite variety and usually hard to find (especially in large quantities), since other people seem to feel the same. But we managed to come home with seven baskets, one to savor beforehand, and six to put towards our homemade jam (we quadrupled the recipe). The results were perfect – a fresh jam that tastes like summer and pairs well with even the most simple corn bread muffins.

I don’t know why, but I always find strawberry jam harder to set (is thereless pectin maybe??), I’ll have to give his recipe a go and see if it’s more successful! XX

Wow, those jars are adorable and the jam looks absolutely delicious. Would probably taste amazing on some clotted cream and scones. My favourite recipe for scones is here: http://www.waitrose.com/content/waitrose/en/home/recipes/recipe_directory/s/step_by_step___how_to_make_perfect_scones.html

So easy to make and you probably already have all of the ingredients in your cupboard already!
