Fried Chicken

For the most part, the chicken we prepare around here is grilled or baked, but every once in a while, it’s fun to change things up a bit. Last weekend for a football-heavy Sunday, we made this recipe, which didn’t disappoint. The herbed oil added such a nice dimension and the chicken was tender with a crispy, crunchy skin. Sadly we can’t add this kind of dish to our weekly repertoire, but it’s nice to know there’s a fool-proof recipe out there for those slightly more indulgent meals.











oh my goodness fried chicken is suddenly everywhere!! I badly wanted to make it after watching The Help..but decided it was a bad and addicting idea…and now I feel the urge to fry up some chicken while rocking out to my favorite song All This Time by The Heartless Bastards

Maybe it’s the way they were photographed, but the fried chicken looks like it has a slightly grayish tinge and it looks uber mushy. True fried chicken should be a warm golden brown and with breading that looks like it should just snap off while still maintaining the tender juiciness inside. This looks cold and like it would make you sick.

I make my mom’s fried chicken about once a year, this last year for a baby shower. But I love the idea of using an herb & garlic oil for the frying! Yum!!!
