The warmer it gets, the less time I want to spend in the kitchen. Lately, G and I have been craving lighter meals, comprised of smaller plates that require little to no cooking. We love the simplicity and rich flavors of Mediterranean dishes and I recently put together some Greek-inspired appetizers (that ended up becoming our entire dinner), which could also serve as a nice alternative to a traditional cheese plate. I used mostly store bought products and added a few simple tweaks to give it a slightly homemade feel. For those nights when you don't want to think about cooking, it's a quick and healthy alternative to ordering in pizza.
