It took me a long time to appreciate the tartness of grapefruit, but once I acquired a taste, it became part of my morning ritual. But I never considered its flavors would lend itself to a dessert, until I tried this cake from Thomas Keller's Ad Hoc at Home (recipe here). It's essentially a remix of a classic lemon cake, but the complexity of the grapefruit brings a whole new dimension to this simple baked good. The smell alone was amazing and I drizzled the royal icing a little earlier than I should have, but it really didn't matter, since this recipe is pretty much foolproof.
