We spend a lot of time in the kitchen, between doing stuff for work and simply feeding ourselves - it’s easily the room that gets the most use. Three years ago, after burning through a couple of blenders, we decided to invest in a better model, something that could stand up to rigorous daily use, and potentially replace other appliances. After researching a few models, we selected the Vitamix Professional Series 500 and it’s been one of the best purchases we’ve made. We use it for everything, from making drinks and sauces (and now baby food), to pulverizing nuts and seeds for baking. The hype behind this appliance is well deserved, so when they asked me to share one of my favorite recipes, it was a no brainer. I’m not great at eating my daily supply of veggies, but have been making this green drink for a while, which isn’t really a meal replacement, but more of a supplement for the rest of my less-than-healthy dietary choices. You can adjust the amounts of each ingredient, but I like it slightly sweeter, so I use three apples. (Recipe at the bottom.)

Ingredients (makes about 2 large glasses)

1 ½ cup coconut water

10-12 ice cubes (I prefer this drink on the colder side)

2-3 apples, cored, quartered or large chop (I like Golden Delicious)

½ cucumber, large chop

¼ lemon, skin and all

3-4 stalks of kale, spines remove, roughly chopped/torn

3-4 leaves of romaine lettuce, roughly chopped/torn

½ bundle of fresh spinach, whole

½ bundle of fresh parsley, whole

1 tbs flaxseeds or flaxseed powder (optional)

Recipe

1. Add in ingredients in order shown, liquid/ice on bottom, followed by fruits, then greens. *Note: Vitamix recommends adding the ice as the last ingredient, but I've found putting it in right after the liquid produces my preferred texture. 

2. Blend on high, until everything is well incorporated. It should have a slightly thick consistency, but easy to drink through a straw.


3. If you need it to be colder, serve over ice, or enjoy as is. Repeat daily (or almost every day.)
