I usually find winter produce to be a bit bland in comparison to the fruits of summer (like watermelons, strawberries, and peaches). However, when I saw
in the lastest issue of Bon Appetit, it instantly changed my mind. It's such a vibrant dish - the bright citruses not only add amazing color, but a nice contrast to the earthy beets and sharp onions. It tastes like the winter version of
that I make every time tomatos show up at the farmers' market and is a nice departure from my usual mixed greens.
