Deep-Dish Pumpkin-Meringue Pie

Pumpkin is one of those foods that seems to be so ubiquitous in seasonal products (lattes, candles, body lotions), that I tend to get a little burned out by the end of fall. But pumpkin pie is always a welcome dessert in our home and it seemed like the perfect way to kick off October. The toasted topping provided a slight nutty flavor that complemented the sweet filling (and also made for a stunning presentation with nearly half a foot of meringue).

    What sort of a pan are you using for your “deep dish?” Are you using a spring form pan and just not putting the crust up the entire way? and then placing the completed pie into a different dish to complete the Meringue?

    I made this pie this past weekend at my family’s harvest party. It was a huge success! Its really not that difficult as some people have suggested (you do not have to chill the pie for 6 hrs +, I put mine in the cooler for 2 hrs and it was perfect). I made the recipe with half the amount of meringue because a half foot for me was a little too much. I also made a gluten free crust so my gluten-free sister could have some. (2 cups GF flour, 1 1/2 tsp xanthan gum, 2/3 cup oil, 1/2 cup whole milk, 1 1/2 tsp salt) Delicious! Thank you for the inspiration!
