Cupcakes and Cashmere

Coconut Nest Cupcakes

April 3rd, 2012

The arrival of Easter candy in stores is worth celebrating – Cadbury Creme Eggs, chocolate bunnies, and my personal favorite: Robin Eggs. Of course they’re simply Whoppers dressed in pastels, but for some reason, that makes them taste that much better. I wanted to incorporate them into some sort of dessert, so when I came across these vanilla cupcakes (with a toasted coconut “nest”), I knew I had found a winner.

They looked so amazing that I had to try them (gluten free though) and put them onto my (very unknown) blog (with your reference, of course!). Thank you so much for the inspiration! I was really happy when they turned out delicious and not gf-tasting at all! It makes me feel more ‘normal’ if recipes are transformable into gf treats :)

So cute! My family usually makes a similar cake-version of this, but in the shape of the Easter Bunny (toasted coconut and jellybean toppings=a must). Maybe we’ll have to switch up the tradition this year because these are ADORABLE!
