Chocolate Sables

Each time we visit my parents up north, we head into the city so we can stop at the Ferry Building on our way out of town. We sip on Blue Bottle coffee and meander around all of the special stores, where we always finish with a trip to Miette, a cheerful bakery with charming desserts. My favorites are their Chocolate Sables (recipe here) – petite cookies with the most complex chocolate flavor. As a surprise this past week, my parents sent me the new Miette cookbook and, of course, I flipped right to the page so I could make them myself. They were remarkably close to the originals (though I opted to use a scalloped edge cookie cutter) and they reminded me of foggy mornings spent in San Francisco.

    Thanks for sharing this! We were in San Francisco a few weeks ago and I fell in love with the French macaroons at Miette. We spent two mornings wandering in the Ferry Building- I could live there. I am so excited to know they have a cookbook!

    I’m curious if that is costa rican baking chocolate you’re grating. It looks just like the dark cacao chocolate I received last week from my dad from Costa Rica. The miettes look fantastic.     how on earth did you roll these out? my dough was more like shortbread dough–just crumbles. while it didn’t seem “soft” to me, i wrapped it in cling film and put in the fridge as suggested, and that didn’t help much. i couldn’t roll it at all and ended up pressing it into a pan like shortbread, which totally defeats the little crispy edges i was so looking forward to. after the dough was such a surprise, i went back over the recipe; i really think i did everything as ordered. sigh. sadness.
