Chocolate-Dipped Macaroons

I have a rather interesting relationship with coconut.  I’ve never actually liked the fruit itself, despite how wildly appealing it is when you’re sitting on some tropical beach.    It’s just one of those things that looks better than it tastes.  When it comes to desserts though, you won’t find a bigger fan.  Yesterday I made coconut macaroons (I used this recipe) for a dinner party and I still can’t believe how easy they were to whip up.   They were perfect on their own, but the addition of semi-sweet chocolate brought them to a whole other level.

My mom and I make these for friends and family every Christmas, with semi sweet chocolate too! Their definitely a crowd pleaser. You’ve now inspired me to make out of the season, they just look so yummy!

I’m actually the opposite! I love fresh coconut — the water, milk, ‘meat’…but not dried coconut. It’s always gets caught in my throat–like popcorn. But these macaroons look so delicious…I think I’ll try out the recipe!

Wow, those look delicious! I have a similar relationship with straight-up coconut – it just always looks better than it tastes to me. It’s like, I feel like I SHOULD like it, but would just rather have it as garnish on cake or dipped in chocolate! I didn’t know these were so easy to make, so thanks!

I’m not the biggest fan of coconut either, oddly. These look so yummy though. Kind of like Samoas, the Girl Scout Cookie, which are so delicious because they’re the perfect consistency. You know what else is delicious that I tried recently? Coconut water. YUM.

Too funny, I just made these over the weekend for my son’s 2nd birthday party! (Slightly different recipe, but same concept, dipped in chocolate.) I wasn’t sure how many people were coconut fans, but I can tell you that those macaroons went fast!! People were ranting and raving about how good they were. They seriously are amazing, especially if you keep them cold so the chocolate stays hard. Mmm… need to make more NOW!

Delish! Have you ever tried Hail Merry Macaroons? they are Raw, Vegan, Gluten-Free, etc. and they are SO DELICIOUS! they have chocolate and vanilla/coconut. Check them out :) They also have a DELICIOUS Meyer lemon tart that I’m OBSESSED with!

Chocolate macaroons are so good. I have a recipe from Nordstrom that’s absolutely delicious. Alternatively, I really enjoy Scandinavian coconut cookies. They’re similar, but use medium coconut and don’t have the chocolate. They’re deliciously simple with only four ingredients and no flour.
