Caramelized Onion and Pancetta Quiche

I like to think of myself as one of those hosts that’s perpetually cool and calm…but it’s usually not the case. I wake up annoyingly early (as in 6am without an alarm everyday), so if I’m having people over for brunch, you’d think that four hours would be sufficient to get ready. But instead of having hot coffee ready, the windows propped open, and food on the table, I’m usually flying from room to room until the doorbell rings. Since I’ve finally accepted just how lousy I am at time management, I now make whatever I can the night before, including a variation on this pancetta and caramelized onion frittata (I added 2 cups of diced pancetta and a handful of chopped chives). It requires little effort the morning of – simply turning on the oven – and makes for an impressive presentation that tastes just as good as it looks.

    I love preparing everything the night befor too. For my last birthday brunch I even pre-made the pancakes and put them in the microwave the next morning. They where totally fine!

    I’m always way too late with the preparations when it comes to welcoming guests. This quiche looks so good and with fall coming I think it would be a great dish for a Sunday lunch.

    Hi Emily – I think quiche is the perfect food – eggs = good protein plus you can add whatever you have available and try new flavor combos! This looks delish. FWIW when i entertain, I usually answer the door disheveled and frantic! But magically it all comes together somehow.

    I’m the same! There’s so much pressure we put on ourselves to be the perfect host and make everything that day from scratch, get the apartment spotless and look well put together ourselves but it’s just impossible! The better host really has time to engage with their guests instead of worrying about what’s going on in the kitchen. I’ve converted to preparing the night before too! Such a relief! xx

    I love quiche because it really can be so simplistic, but it’s a delicious and impressive looking food for guests! I too scramble around the house before guests even though in everyday life I’m very organized.
