Butternut Squash Tortellini

If you happen to have an entire lazy afternoon available, I highly recommend making homemade Butternut Squash Tortellini.  Served with a brown butter sauce with walnuts, sage and dried cranberries, it’s an indulgent meal that’s hearty and wonderfully comforting.  The process, though labor intensive, is well worth the trouble for the autumnal flavors and savory aroma that fills your house.

    I made a pasta with a butternut squash puree over the weekend and it took forever, but I loved the taste of it. It was very indulgent and very heavy. I would love to try your recipe though.

    Anything with butternut squash is amazing! In fact, I HIGHLY recommend the Moroccan salad at California Pizza Kitchen. I make it at home now, sans the ethnically spiced chicken, and call it “Autumn Salad.” It has butternut squash, avocado, almonds, dried cranberries (along with some other awesome stuff) tossed in a champagne vinaigrette!
