Blueberry Crumb Bars

I prefer desserts that can also be served for breakfast and blueberries make these entirely acceptable to eat before noon.  The produce aisle has been spilling over with fresh blueberries, so it was only natural for me to return home with five baskets of them.   After browsing through dozens of complicated recipes, I decided on these bars, which are simple and taste like summer.  They’re juicy and crumbly and will make a terrible mess if you bring them to a picnic, so just be sure to pack extra napkins.

Blueberries are one of my favourite fruits, they always make such delicious deserts. I recently made a blueberry cake with a sour cream topping, it was gorgeous.

My mum used to make this slice all of the time when I was growing up only she used to use raspberries and sometimes strawberry jam when raspberries wern’t in season. I remember is always tasted yummy though. Thanks for the trip down memory lane – now if you’ll excuse me, I have a dessert to whip up!

I made a blueberry crumble last night… but I didn’t seem to get the topping right. Its just remained dry like flour and didn’t turn to that sticky crispyness that I love so much about crumbles :(

Also a great dessert to breakfast treat: crostata! It is delicious with vanilla ice cream on a summer night or re-heated (or even cold), the next morning.

I tend to make it even simpler by buying store bought pie crust (the dough not the pre-baked) and using only the flour-sugar-butter mixture to cover the fruit. It is a delight!

I made the same recipe (from SmittenKitchen) and it turned out beautifully. But I adapted it as well to make a more oat-y bar–easier to cut, less crumbles and less buttery.
