Blueberry Crumb Bars
I prefer desserts that can also be served for breakfast and blueberries make these entirely acceptable to eat before noon. The produce aisle has been spilling over with fresh blueberries, so it was only natural for me to return home with five baskets of them. After browsing through dozens of complicated recipes, I decided on these bars, which are simple and taste like summer. They’re juicy and crumbly and will make a terrible mess if you bring them to a picnic, so just be sure to pack extra napkins.

Yummy… I really should try to make something with bleberries while they’re still fresh! Thanks for the idea!

We just got a whole lot of bluberries the other day too…Should make some:)
Kisses and have a lovely day:)
lol. Good way to justify dessert for breakfast
Blueberries are one of my favourite fruits, they always make such delicious deserts. I recently made a blueberry cake with a sour cream topping, it was gorgeous.
Will be attempting these this week!

Oh, yum. That looks much better than the breakfast I had today. As someone who lives for French toast, this is my kind of breakfast.

My mum used to make this slice all of the time when I was growing up only she used to use raspberries and sometimes strawberry jam when raspberries wern’t in season. I remember is always tasted yummy though. Thanks for the trip down memory lane – now if you’ll excuse me, I have a dessert to whip up!

yummyyyy…..i must try it!!! i love blueberries

ooh i love that recipe! i make it with blackberries though which grow mad around here at this time of the year, but blueberries are more expensive.
I love blueberries! And I also love the fact that I have somewhat associated it with summer.
I made a blueberry crumble last night… but I didn’t seem to get the topping right. Its just remained dry like flour and didn’t turn to that sticky crispyness that I love so much about crumbles
Not happy

Simply scrumptious
Also a great dessert to breakfast treat: crostata! It is delicious with vanilla ice cream on a summer night or re-heated (or even cold), the next morning.
Here is the Barefoot Contessa’s version:
http://www.foodnetwork.com/recipes/ina-garten/summer-fruit-crostata-recipe/index.html
I tend to make it even simpler by buying store bought pie crust (the dough not the pre-baked) and using only the flour-sugar-butter mixture to cover the fruit. It is a delight!
I made this same recipe and they were delicious!!!! gone in a day.

Those blueberry bars look incredibly yummy
I love blueberries so I definitely have to try these!

Mmmm. These look so good! I wonder how they’d translate with frozen blueberries (if in a cold Boston winter, I’m looking for a bit of a summer flashback).
Becca
This looks amazing! I’m definitely trying this as soon as possible, what a fun summer dessert; and I totally agree about desserts that can double as after dinner treats and left overs for the next’s days breakfast.

I have a confession: I eat dessert for breakfast all the time. lol. Whenever I make a big dessert for just me and my man there is ALWAYS leftovers…so naturally I slice myself off a little piece on my way out the door the next morning.

what kind of camera do you use? the quality of your pictures is amazzzing!
I made the same recipe (from SmittenKitchen) and it turned out beautifully. But I adapted it as well to make a more oat-y bar–easier to cut, less crumbles and less buttery. Good for breakfast as well. We’re private chefs and we serve it to our clients all the time. Here’s the link:http://applesandonionsla.com/blog/kitchen/blueberry-bars/
mmmmm, ok so now I’m craiving a crumb bar….damn it.
