Cheesecake? Not a healthy dessert. Until you’ve felt the weight of 2 pounds of cream cheese (plus a pound of butter) in your hands, you can’t really comprehend how something that tastes so light can be so deceptively naughty. But let me assure you – this is worth it. I’ve never even been one of those die hard cheesecake fans, usually choosing something with chocolate or caramel instead. This recipe, topped with a generous helping of fresh blueberries, is such a great way to use up an abundance of summer produce while also thoroughly indulging.
