Blood Orange, Beet, and Fennel Salad

I usually find winter produce to be a bit bland in comparison to the fruits of summer (like watermelons, strawberries, and peaches). However, when I saw this recipe  in the lastest issue of Bon Appetit, it instantly changed my mind. It’s such a vibrant dish – the bright citruses not only add amazing color, but a nice contrast to the earthy beets and sharp onions. It tastes like the winter version of this salad that I make every time tomatos show up at the farmers’ market and is a nice departure from my usual mixed greens.

    The salad looks so yummy and I think it is also healthy.. Sad thing though is I haven’t seen blood orange here is our supermarkets.
