I’ve made a lot of desserts over the years, but this banana cream pie is my hands down favorite. It’s a combination of several recipe inspirations (like David Leibovitz’s chocolate cookie crust) but it’s simply a rich vanilla custard, layered with ripe bananas. I got a little experimental and brûléed the top layer of fruit, before topping it off with a rum-infused whipped cream and chocolate shavings. It’s ridiculously indulgent, but the results are beyond delicious.
