I’m ashamed to admit that I can go weeks without incorporating a single vegetable into my diet.  It’s not that I don’t appreciate a handful of sugar snap peas in the summer or roasted eggplant in the winter, but it’s rarely something I crave or think to make on my own.  Martha Stewart’s Asparagus Gruyere Tart has changed my mind entirely with its flaky crust, gooey cheese and perfectly crisp asparagus.   It’s not exactly health food, but it’s definitely a step in the right direction.

  10. YUM! This looks delicious! I’m on a no-carb, no-sugar diet (medical reasons), so I’ve been eating a lot of asparagus… they’re my favorite veggie. :)

  21. Yum, yum, yum! If I had only seen this yesterday at the store. I bought a bundle of asparagus to steam w/ our pork tenderloin and sweet potatoes. This looks so tasty!

    Don’t feel bad about the veggie thing – trust me if I don’t make a serious effort to think of them – my grocery list is nothing but carbs and sugar!

  24. Uh, YUM. Made this the other night after seeing it on your blog. So. Good. I can’t wait to try it again with some different combos (roasted grape tomatos, kalamata olives and goat cheese anyone)?, roast chicken and pesto? or maybe a dessert pizza with mascarpone, peaches and honey – the possibilities are endless. Don’t know why I never thought of using puff pastry for pizza before! Thanks for sharing, and for the daily inspiration!

  31. Does it really take 20 minutes to cook asparagus? I’ve accidentally over-roasted some in about 5 minutes and made it all gooey.

  33. I love this recipe and often make it. To give it a wow factor, add a poached egg on top as it goes perfectly with the asparagus.
