Apple Yogurt Coffee Cake

We almost always have apples in the house – they’re an afterthought, of sorts – an item that perpetually appears on our shopping list year-round when we go to the farmers’ market each Sunday. They don’t exactly have the same allure of those special seasonal fruits – the jewel-like seeds of a pomegranate or the golden skin of a Bartlett pear, but somehow they never fail to impress when baked into desserts. In the colder months, I’m a big fan of one-dish meals for breakfast, something simple that you can make the night before and then toss it in the oven while you wait in bed with a cup of coffee. This apple yogurt coffee cake is everything you want on a Saturday morning in a warm apple-pie-meets-coffee-cake kind of way.

    Made this on Sunday–perfectly delicious. My dog thought so too, he ate more than half of it while I was out getting a Christmas tree! I could have killed him. Will plan to make it again for sure!

    I made this for my boyfriend and I this morning! I used Greek yogurt and a bundt pan, so instead of topping the cake with the sliced apples I lined the inside of the pan, so the entire cake was covered in soft, slightly carmelized apples! Fantastic coffee cake!!
